Roasted Vegetables ~ Harvest Fest at the Office #PotLuck #recipe

Everyone brings in a favorite dish to share with all the co-workers at the office. Lots of good food and good cheer at this special time of the year.  For this years luncheon I decided to make roasted potatoes with carrots and onions. Happiness is eating with people you love. Hope you try the recipe.

Roasted Vegetables – serves 8
preheat oven 450

Ingredients

3 pounds  potatoes peeled and cut up
1 pound carrots peeled and cut up
2 medium onions peeled and cut up
1/4 cup good olive oil
Salt/Pepper to taste
2 tablespoons minced garlic (6 cloves)
2 tablespoons fennel seeds
1/2 cup cold water ~ optional

Place vegetables in a large bowl with the olive oil, salt, pepper, garlic and fennel seeds ~ toss until the vegetables are well coated. Transfer  to a baking pan and spread out into 1 layer. Add cold water Roast in the oven for 45 minutes to 1 hour or until potatoes brown.
