This is a really easy after work during the work recipe I go to when ever I remember to buy artichokes. Hope you like it.
1 lb boneless chicken
3 cloves garlic or couple dashes garlic powder on chicken
1/2 cup diced onion
1 can diced tomatoes and 1/2 can water
1 can Artichokes hearts rinsed drained and sliced in half
3 tbs.Olive Oil
1 – 2 tbs Balsamic vinegar
heat olive oil in large pan toss in garlic and saute chicken – salt and pepper to taste. When chicken is browned remove to plate to rest and add diced onions to pan and cook with vinegar til soft.
Add tomatoes and sliced artichokes and half can water Salt/pepper to taste. Stir. Bring to simmer. Meantime cut up chicken and add back to pan with any juices from chicken. Bring to simmer
Cover and cook for 10 minutes. Serve with your favorite pasta or rice.
