christmascake4Christmas Tower Cake – Panettone

2 cups cold heavy cream
3 Tb sugar
1 cup each – blueberries, raspberries, blackberries and strawberries (Total 4 cups fruit)
3 oz grappa or rum or whatever you like
1 Panettone Cake

Whisk the heavy cream with 2 tb sugar in a large bowl until firm.

In another large bowl, add all the fruit, 1 tb sugar and grappa or rum. Stir and let stand for a few minutes until sugar melts.

Cut the cake into 1 -1 1/2 in thick slices.  Reconstruct the Panettone cake by layers, spreading the  whipping cream and mixed fruit and juices equally between the layered pieces.  Repeat until all the cake is put back together.  Top the cake with remaining whipped cream and fruit.  If you have more, you can put around the bottom of the cake.

12 servings

Honestly, I lost control of the situation from the start  (too many cans of whipped cream going on)   but Merci said  go on with the show, so we went with it.  We used frozen fruit (had lots of juice), left out the sugar and rum/grappa and used canned whipped cream.   The kids just loved the reddi whipp cans and went to town, really had a great time and we made a big mess. Fun stuff .  P.S. Now I know how OIive Oyl felt around Popeyes’ nephews :)

Sophie, Bailey and The Present

December 20, 2012 · 1 Comment

sophie and bailyIt is funny how children can just find any item in the home and decide that this will be a great gift for someone.  Yes, funny, especially when the item that they find is an item that you have in your home…LOL!  Now not only did this item come from my house, but, I was the person that had to wrap it and bring the present to Sophie’s home to place under her Christmas tree.  The gift was for her mom and she was so excited about this special present.   How could I not indulge this sweet act of love.

However, Sophie did run into a minor problem.  The problem was her dog, Bailey.  When Baily saw the present he just assumed the gift was for him.  Bailey don’t you know what happens when you ASS U ME!

And so the Bailey and Sophie dance had begun.Sophie and baily 3I was truly surprised to see how Bailey persisted in his attempt to grab this special gift.    I am sure that my granddaughter did not even think that this gift, that she acquired at  no cost to her, would bring such attention , or that she would have to fight off her terrier, who just seemed to insist that he, bailey, should open the gift.

So funny and so innocent as the dance of Sophie, Bailey and the present continued to play out.

In the end Sophie managed to keep Bailey at bay, and mommy opened up the gift.

Flying With Kids

October 18, 2012 · Leave a Comment

Flying with children is not easy…but not impossible…your travel plans can be easy.

 Here are some  helpful tips…

Get their energy out while you can – Early airport arrival is always necessary, especially in today’s times.  But this does not mean you have to just sit at the gate, with the kids, and wait.  Take a walk with the kids, find an area that they could just run…let them use up all their energy before getting boarded on the plan.

Bring a bag of tricks –  OK, you  really don’t want to carry any extra bags when traveling, but this bag will not carry anything but entertainment for the kids.  Yes, keep a surprise bag of special items…When you get on board magically make them appear when you deem necessary.

Pack some sustenance – Snack, snack, snacks…pack some of their favorite snacks…maybe even something that they normal never get and always want…you know the not so good snack…Treat, treat, treat….

Embrace technology –  Some airplanes have  built in TV screens…I know Jet Blue does…this really helps keep a child entertained…Packing a portable DVD player, iPad, laptop or even a mobile phone preloaded with videos and games can keep kids busy for hours on end.

Fly direct and fly early – Yes, and yes…take an early flight and always direct…getting on and off a plane is tiring for me imagine how tiring and boring it would be for a child…keep the trip simple and distance short…the main objective, with children, is to arrive at destination feeling thrilled that your vacation has begun and not feeling like your vacation is over….:)
