I love how easy and delicious this pea soup recipe is. The wonderful thing about frozen peas is that they taste great and are available all year round. I hope you try it.
Spring Pea Soup
2 cups cubed peeled potatoes
2 tablespoons butter
6 cups chicken broth
2 cups fresh or frozen peas, thawed
2 tablespoons minced chives
In a large saucepan, saute potatoes in butter until lightly browned. Stir in broth; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. Add peas; cook 5-8 minutes longer or until peas are tender. Cool slightly.
In a blender, process soup in batches until smooth. Return all to the pan; heat through. Sprinkle with chives. Yield: 6 servings.
I cooked off some bacon and crumbled it on top. I like bacon.
This is a really tasty, easy and good for you soup I got from Dr. Oz. The recipe makes two lunches for me – along with a piece of fruit – a orange or a banana – or whatever you like. Sometimes, I add some cooked whole wheat pasta or brown rice. Just be sure to pack it in a good travel container or thermos to avoid a accident on the train.

Makes 4 1/2 cups
1 (14.5oz) can fire-roasted tomatoes with medium chilies
1 (15oz) can of chick peas – rinsed and drained
2 cloves garlic
2 tsp chili powder
2 cups vegetable or chicken stock/broth
1/4 cup lime juice
1/2 cup chopped cilantro
Puree tomatoes and chick peas garlic chili powder with broth in large blender – If necessary transfer to large pot and bring to boil – lower heat and simmer 10 minutes. Then puree in small batches. Before serving, add cilantro and lime juice – Enjoy!!!
