Ricotta Squash Stuffed Baked Shells

I love this dish – I’m not one to peel hard squashes, so I always buy frozen. Handy, easy, good and always available.

Ricotta Squash Stuffed Baked Shells
1 (26 ounce) jar pasta sauce  (I add a half jar of wine vinegar/water – secret ingredient -I find jar sauces too thick)
24 jumbo shells
 12 ounces of frozen squash -thawed
3/4 cup ricotta cheese
 1/3 cup grated Parmesan cheese
 1 egg, slightly beaten
 2 tbs dry bread crumbs – plain or seasoned
 2 tbs. dry  parsley
1 tsp freshly ground nutmeg
 pepper to taste
 shredded mozzarella cheese

Preheat oven to 350.Coat a 13×9″ baking dish with cooking spray. Spread half the pasta sauce over the bottom of baking dish. Prepare shells according to package directions.Meanwhile in a medium bowl, combine the squash, ricotta, grated cheese, egg, bread crumbs, parsley , nutmeg and  pepper. Evenly divide the squash mixture among the shells. Arrange in a single layer in the baking dish. Pour remaining sauce over the filled shells. Top with  mozzarella cheese.Cover with foil - bake 20 minutes. Remove the foil - bake for 5 minutes longer or until hot and bubbly. Make a salad :) –   Serves 8

Roasted Plum Tomatos

I just love roasted tomatos.  The tomato is one of my favorite garden plants.  It is a fruit and a vegetable in my book.  It comes in different sizes and colors.  The tomato is the state plant of New Jersey and Arkansas.  Here is a really easy and delicious side or starter you can make for your family and guests all year round.

Roasted Tomatos

Oven 350

6 plum tomatos, halved lenghtwise
Olive oil for baking dish and drizzling
Agave
Paprika
1 cup Panko breadcrumbs
Salt/Pepper
2 Tbs. chopped fine parsely

Place tomato halves in lightly oiled baking dish and drizzle more olive oil, agave, sprinkle the tomatos with  the breadcrumbs & paprika.  Season tomatos with salt and pepper and roast for 20 minutes in preheated oven.  Sprinkle with parsley before serving.

Shamrock Pizza – Cooking For Sandra

Sandra told me that her favorite pizza topping is green peppers. So when I saw this quick and easy recipe for St Patricks’ Day, I asked her to come over. This is so good and so easy and who doesn’t like pizza? Make this a starter or the main meal, a great way to get the family to eat more vegetables. Anyway you try it, I know you and your family are going to enjoy it. Happy St Patricks’ Day!!!

Vegetable Christmas Tree

Cauliflower, broccoli, grape tomatoes and yellow pepper stripes…..your favorite dip…Liam wanted ketchup…..make someone happy!

DIP FOR VEGETABLES
 
  2/3 c. low fat mayonnaise
1 tbsp. onion, minced
1 tbsp. parsley flakes
2/3 c. yogurt
1 tsp. dill weed
 
Mix all together. Dip cauliflower, broccoli, tomatoes and yellow pepper!!!!
