California Here We Come

th (36)I am so excited! Excited about going to California.

Paso Robles, Ca to be exact. A city located in San Luis Opispo County.

Why are we going to Paso Robles, you might ask, well, Paso Robles is home to my brother-in-law, John, and my new sister-in-law, Carol.

My husband and I cannot wait to see them.  The last time we went to Paso we had such a great time, pre sister-in-law time.  california last night 029

Excited as I am about heading west, I am also pretty annoyed that I have to get on a plan and fly 5 – 6 hours.  You have no idea how I hate being closed in small spaces, especially for a long period of time.  Last time we flew to California my  knees hurt from sitting  so long, and how I was annoying the passenger sitting next to me because I just kept getting up to go to the bathroom. I won’t apologize for having a bladder issue.  No way!

In Paso Robles we visited a few wineries.  The best!  We went to a winery called Hunts Cellar and there I bought a bottle of wine that was way over my price limit, but then I was on vacation.

Now we hear that Paso Robles is one of California’s best-kept secrets – from world-class vineyards.

A lot has been happening in Paso since we were there two years ago.  california 062

Now the Brennans will once again jet over, and get to redo, or get to do more than what we did in 2011.  And once again the Brennan boys will be together.  Just being the Brennans Boys.

Singleton’s Salsa Shack – Open For Summer 2013

 On Saturday I met a girlfriend and we took a ride out to Tobay Beach in Oyster Bay NY.  What a perfect day for a drive and lunch by the water!  Our destination was Singleton’s Salsa Shack for a yummy Mexican lunch.  They  are opened  for Summer 2013 .

It was a long drive and the first thing we ordered were frozen Margaritas. So good and so refreshing. Lots of shade from the sun and a lovely breeze off the water.

Lots of drinks to choose from, but a simple Classic Margarita is just right – no salt please 🙂

 

I ordered the Crab Enchiladas, served with  sour cream, rice and beans and a simple salad.  Kraft Kitchen Recipe Below.

My friend ordered the Shrimp & Rice Plate.  Each serving was very generous, that we took half of it home.

 

 There is also a miniature golf perfect for families with small children and a  park play ground and of course a beach. Lots to do and see. A perfect place to be this summer. If you get a chance, go and enjoy it for yourself!

P.S. Parking is free when you are dining only. Just tell the parking attendant.

Seafood Enchiladas – Kraft Recipe

1/2lb.  cleaned shrimp, chopped
1can  (6 oz.) crabmeat, drained, flaked
1can  (7 oz.) whole kernel corn, drained
1/2cup  chopped green onions (about 2)
1/2tsp.  ground red pepper (cayenne), divided
1pkg.  (8 oz.) KRAFT 2% Milk Shredded Cheddar Cheese, divided
10 flour tortillas (7 inch)
4oz.  (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
3/4cup  milk

 PREHEAT oven to 350ºF. Cook and stir shrimp in medium nonstick skillet sprayed with cooking spray on medium heat 2 min. Add crabmeat, corn, onions and 1/4 tsp. of the pepper; mix well. Cook and stir an additional 2 min. or until shrimp turn pink. Remove from heat. Stir in 1 cup of the shredded cheese.

SPOON 1/3 cup of the seafood mixture onto each tortilla; roll up. Place, seam-sides down, in lightly greased 13×9-inch baking dish. Place cream cheese in medium saucepan. Add milk; cook on medium-low heat 5 min. or until cream cheese is completely melted and mixture is well blended, stirring frequently. Pour evenly over enchiladas.

BAKE 5 min. Remove from oven. Sprinkle with remaining shredded cheese. Bake an additional 5 min. or until cheese is melted. Sprinkle with remaining 1/4 tsp. pepper.

RoseArt Sidewalk Chalk and Hopscotch

traditional-game-hopscotchWhen I was a child I  always loved to play HOPSCOTCH. My friends and I also  played at recess and  after school.

Hopping on one leg was such a challenge and how about  bending down, on one leg, to  pick up a stone, stick, or whatever we had available to help us play the game

th (35) Of course, if no one had a piece of chalk this game was not an option.  Some of my friends would always carry a piece of chalk and when someone yelled, hopscotch, out they would pull it and begin to box up numbers.

                     Chalk and a sidewalk go hand on sidewalk. Now our grand kids have taken up playing hopscotch.   However, the chalk they use is not your regular straight plain white piece of chalk but  RoseArt Chalk.050713 006
