Stuffed Zucchini – A Summer Favorite #TastyTuesday Posted on August 15, 2017August 12, 2017Author liz 2 medium zucchini, halved lengthwise 1 Tbsp. olive oil 1 clove garlic 1/2 cup chopped onion 1/2 lb favorite chopped meat (beef, chicken, turkey or pork or mix) 1 cup of your favoite tomato sauce 1/4 cup your favorite wine 1/4 cup water 2 Tbsp. chopped parsley 2 small potatoes washed and quartered – optional 1. Preheat oven to 400°F. Scoop out pulp from zucchini halves, then chop pulp and set aside. Arrange zucchini halves in baking dish ; set aside.2. Heat olive oil in large skillet over medium heat. Cook garlic and onions, stirring occasionally for 1 minute. Add zucchini pulp and chopped meat and cook, stirring occasionally, 10 minutes or until meat is browned. Stir in parsley and sauce and wine and water. Bring to a boil. Lower heat. Cover and simmer 5 minutes.3. Evenly fill zucchini halves with mixture, no waste. pour any extra around zucchini. Put potatoes around the zucchini . Bake 30 minutes or until zucchini/potatoes are tender.
