Zucchini And Capers in Tomato Sauce

Love zucchini in season and now is the season!! Here is a quick and easy recipe which can be served as a side vegetable with your favorite protein (chicken, pork, eggs).

Zucchini & Capers In Tomato Sauce.

2 small zucchini –  rinsed and sliced into rings
1 8 oz can tomato sauce
2 TB olive oil
2 cloves garlic – sliced
1 tp. vinegar (more if you like)
2 TB capers (Optional)
Parsley
Salt /Pepper to taste

Add olive oil to large frying pan and heat. Add zucchini rings and saute until lightly browned, turn zucchini rings  over  and add garlic and continue to saute.

Add tomato sauce, capers and vinegar, salt and pepper. Cook for 5- 8 minutes. Add  parsley  (fresh chopped or dried).

Serve or cool and refrigerate. Can be served cold  as a starter. We took it cold to the beach and ate it with fresh Italian bread. Happy 🙂

Bailey And Baby Emma

Bailey is my daughter-in-law’s dog.  Bailey was our first grand dog.  He was always number one until  the first grand child came along.  Now Bailey never had a problem with children  until Christian was born, my grand son.

Seems Christian and Bailey are always at odds.  Bailey has snapped at him more than a few times.   Of course we are always assured that the dog won’t bite Christian .  Well, in my book there is no guarantee when a dog shows teeth .   BEWARE!  But interestingly  enough  Bailey loves baby Emma.  He never shows teeth, he always wants to be kind to her.  Emma is the one who tends to be standoffish .  Maybe because Emma has two dogs at home .  One of which happens to be Bailey’s brother .

It doesn’t take Bailey too long to want to play with Baby Emma .  But even when she rejects his playful gestures I noticed that Bailey does not get annoyed with her. Maybe it’s because he smells his Bro on her.  We cannot figure it out.  But I kinda have my own suspicions.  I  think Bailey loves Baby Emma because she is not Christian.  Just saying.

Marvel SuperHero Ocarina

This is the Marvel 12 hole Wolverine Plastic Tenor Ocarina. A  pocket size,  easy to play  instrument and  inexpensive way to introduce children to music.  My daughter recognized the Ocarina from playing “The Legend of Zelda, Ocarina of Time”. My grandchildren just had a fun time playing their own  melodies. I originally gave it to Liam.

Then Caleb wanted to try it and would not stop bothering Liam until he handed it to him.

So Liam handed it over and Caleb gave it a try.

It was just a matter of time until Natalie wanted to give it a go. This went on all afternoon. 🙂
