Easy Rugelach

Here is a easy recipe for one of my favorites –  rugelach –  we made one with strawberry perserves and one with Natalies’ favorite……nutella.   Store bought pie crust , chopped walnuts and chopped dried  dates……you can use any combo you like – these will go fast!

I love parchment paper but this is great too…..

Vegetable Christmas Tree

Cauliflower, broccoli, grape tomatoes and yellow pepper stripes…..your favorite dip…Liam wanted ketchup…..make someone happy!

DIP FOR VEGETABLES
 
  2/3 c. low fat mayonnaise
1 tbsp. onion, minced
1 tbsp. parsley flakes
2/3 c. yogurt
1 tsp. dill weed
 
Mix all together. Dip cauliflower, broccoli, tomatoes and yellow pepper!!!!

Shopping With Christian

When I take Christian shopping with me it always ends up to be an adventure of some sort.  Like when he screams in the store for a balloon.  Why does Stop n Shop have to have balloons all over their store?  Can’t they just stick to food.

Christian does try to help me with the shopping bags… what a helper he is, he even tries  to pick up the bags.  Grandma’s little helper…just love him.

Look he even wants to take out the groceries for grandma.  Good boy Christian, helping grandma is very good…What a wonderful little  boy you are.

Oh, Oh, he found the Oreo cookies.

Christian loves Oreo’s, they are his favorite cookies.

How can I take the cookies away from him without him crying?  Ok, just have to tell him that the cookies are not for now they  are for later, after dinner…

Christian just did not care.  He went for the cookies outside packaging and all…Biting the outside of the Oreo’s is the best way to get to bite the cookie inside…I think that was what he is thinking.

Christian is having difficulty getting the package open with his baby teeth.   Oreo packaging is not easy to open  for  little boys.

Thank goodness.

Christine, listen to Grandma and put the Oreo’s down and play with the balloon  you had to have.   Remember how important it was to have the balloon.

No the cookies is what he aimed to have.

It did not take Christian long to  realize that the cookies were not going to get opened ,no matter how many times he tried to bite into it.

So giving them back to grandma was the only answer.  Christian was  disappointment that he could not crack the cookie package, no matter how  hard he tried.

He gave up.

Christian decided that helping grandma with the bags was not what he really wanted do do.

What does he think he wants to do now?

Gingerbread House

The best part of putting together a gingerbread house is when you get to decorate it, share and eat it all together!!!

For the more advanced in gingerbread you might want to try this recipe from Sandra Lee “Gingerbread Cookies with Royal Icing” – yummy!!!

 

Serves: 12 to 15 cookies, depending upon your cookie cutters

 

Gingerbread cookies:

  • 1 package sugar cookie mix
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1/4 cup melted butter
  • 2 tablespoons pumpkin pie spice
  • 1/2 teaspoon ground ginger
  • 1/4 cup dark molasses
  • 1 teaspoon vanilla extract
  • Royal Icing
  • 2 large egg whites or 5 tablespoons meringue powder
  • 2 teaspoons fresh lemon juice or 1 teaspoon vanilla extract
  • 3 cups confectioners’ sugar, sifted
  • Food coloring, if desired

For Gingerbread Cookies:

 

Directions

Preheat oven to 350 degrees F.

 

In a large mixing bowl, blend all ingredients together and chill for up to 1 hour. Roll dough out on floured board about 1/8-inch thick. Cut desired shapes with cookie cutters and place onto sheet pan. Bake for 8 minutes in preheated oven.

 

For Royal Icing:

 

With a hand mixer, beat the egg whites with the lemon juice or extract until frothy. Add the sifted powdered sugar and beat on low speed until combined, smooth, and shiny. Turn to high and beat approximately 5 minutes till stiff and glossy. Add food coloring, if desired, and transfer to a pasty bag to pipe onto cookies.
