1 cup bread crumbs
5 beaten eggs
3/4 cup milk
3/4 cup grated romano cheese
1 clove galric-minced
1/2 cup chopped flat leaf parsley
salt/pepper to taste
Combine all in a large bowl, mix well and let rest 5 minutes. Put enough oil in large frying pan to come up 1/2 inch on the side – heat over medium heat. Using a tablespoon, drop the bread crumb mixture into the oil carefully and gently fry balls until golden brown – 3 to 4 minutes per side. Drain balls on paper towel lined plate. Discard all but 2 Tbsp of the oil from the pan.
Add 1 small diced onion and saute until soft, not browned, about 5 minutes. Add one 28 oz can of crushed tomatoes, 1 tsp sugar and salt/pepper to taste. Simmer for 10 minutes. Add the balls and 1/4 cup chopped fresh basil. Add 1/2 cup water. Cook another 5 minutes and serve over your favorite whole wheat pasta or rolls. Mixed salad will complete the meal.
