I love all kinds of pasta, but my favorite one is spaghetti. It’s a action pasta, if you know what I mean, Twirl, high and low and eat 🙂
Gotta have my spaghetti with meatballs and sausage at least once a week. It’s also a go to recipe for when my daughter and her family come to visit – is everybody happy??
Tomato Sauce with Meatballs and Sasauge
1 pound spaghetti
1/4 cup olive oil
Salt and pepper
6 sausage links
1/2 to 1 teaspoon crushed red pepper flakes (to taste)
5 cloves garlic, chopped, 3 for sauce, 2 for meatballs
1 small onion, minced
1 cup red wine
1 (28-ounce) can crushed tomatoes
1 (14-ounce) can diced tomatoes
1/4 cup chopped flat-leaf parsley
Several leaves fresh basil, torn
1 pound meat loaf mix
1 egg
1/3 cup grated cheese
1/2 cup Italian bread crumbs
Heat water for pasta to boil. Salt and cook pasta 7 to 8 minutes, to al dente.
Heat a large heavy bottomed sauce pot over medium high heat. Add 2 tablespoon olive oil to pot. heat and add sausages. Brown sausages 2 minutes on each side – remove sausage.
Combine ground meat, egg, 2 cloves chopped garlic, 1/3 cup cheese, and bread crumbs. Season with S/P and roll into balls and brown 1-2 minutes on all sides. Remove meatballs. Add pepper flakes, 3 cloves chopped garlic and onion to the pot and saute 1 minute. Add wine to the pan and scrape up drippings. Add tomatoes , herbs and bring sauce to a bubble. Add sausage and meatballs back to the pot and reduce heat to simmer 15 to 20 minutes.
Serve with your favorite salad and a glass of wine. Oh and don’t forget the bread!
I love the convienence of packaged coleslaw – another go to salad. I just season with oil and vinegar and salt/pepper. Tastes even better the next day!
