Singleton’s Salsa Shack – Open For Summer 2013

 On Saturday I met a girlfriend and we took a ride out to Tobay Beach in Oyster Bay NY.  What a perfect day for a drive and lunch by the water!  Our destination was Singleton’s Salsa Shack for a yummy Mexican lunch.  They  are opened  for Summer 2013 .

It was a long drive and the first thing we ordered were frozen Margaritas. So good and so refreshing. Lots of shade from the sun and a lovely breeze off the water.

Lots of drinks to choose from, but a simple Classic Margarita is just right – no salt please 🙂

 

I ordered the Crab Enchiladas, served with  sour cream, rice and beans and a simple salad.  Kraft Kitchen Recipe Below.

My friend ordered the Shrimp & Rice Plate.  Each serving was very generous, that we took half of it home.

 

 There is also a miniature golf perfect for families with small children and a  park play ground and of course a beach. Lots to do and see. A perfect place to be this summer. If you get a chance, go and enjoy it for yourself!

Seafood Enchiladas – Kraft Recipe

1/2lb.  cleaned shrimp, chopped
1can  (6 oz.) crabmeat, drained, flaked
1can  (7 oz.) whole kernel corn, drained
1/2cup  chopped green onions (about 2)
1/2tsp.  ground red pepper (cayenne), divided
1pkg.  (8 oz.) KRAFT 2% Milk Shredded Cheddar Cheese, divided
10 flour tortillas (7 inch)
4oz.  (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
3/4cup  milk

 PREHEAT oven to 350ºF. Cook and stir shrimp in medium nonstick skillet sprayed with cooking spray on medium heat 2 min. Add crabmeat, corn, onions and 1/4 tsp. of the pepper; mix well. Cook and stir an additional 2 min. or until shrimp turn pink. Remove from heat. Stir in 1 cup of the shredded cheese.

SPOON 1/3 cup of the seafood mixture onto each tortilla; roll up. Place, seam-sides down, in lightly greased 13×9-inch baking dish. Place cream cheese in medium saucepan. Add milk; cook on medium-low heat 5 min. or until cream cheese is completely melted and mixture is well blended, stirring frequently. Pour evenly over enchiladas.

BAKE 5 min. Remove from oven. Sprinkle with remaining shredded cheese. Bake an additional 5 min. or until cheese is melted. Sprinkle with remaining 1/4 tsp. pepper.
