Avocado and the Quesadilla

th (38)If you know me ,you have to know how much I love AVOCADOS.

And I hope by now, you also know, what a source of vitamins and antioxidants they provide to our daily health.

I try to eat an avocado everyday, or whenever I can. When I go out to a restaurant if  the ingredient in the dish stats,  avocado,  I will  make that my meal.

When I came across this recipe I was delighted.

YUM!  Avocado Quesadilla’s!   My eyes lite up and I saw this as a great treat for me.

Here is the easy, simple recipe:

Mash half of a avocado with the juice of half a lemon or lime and a pinch of salt.
Melt some butter in a small saucepan over medium heat and place a corn or flour tortilla down in the saucepan.
Sprinkle 1/4 cup grated cheddar across the surface and cook until it’s melted.
Quickly spread the avocado across one half of the tortilla.
Turn off the heat and fold the tortilla in half, pressing down so the melted cheese glues it together.
Top with salsa.  OLA!

For anyone who is on the ledge about trying avocados this is the recipe that could win you over.
