Sausage, Onion, Peppers and the Baguette

Stop and Shop sends out coupons every so often.  They also send recipes that I so enjoy.  This recipe caught my eye.  Sausages, onion, and peppers, sprawled over a delicious baguette loaf, and of course the slice of cheese that melts so perfectly on the top. Dish is a favorite for weekends!  Weekends are treatends for me.

Ingredients:

1 French baguette loaf

4 fresh sausages links

1 tablespoon olive oil

1 large sweet onion, thinly sliced

2 large red bell peppers, seeded and sliced into strips

1 cup pizza sauce, heated

garnish with baby spinach or arugula (optional)

4 slices(thin) provolone cheese, cut in 1/2 moons

Preheat broiler,  Cut baguette in half  lengthwise, pull out soft center of top half. Grill or cook sausages in a skillet until internal temperature reaches 165 F.  Heat oil in skillet and add peppers and onions, season with salt and pepper, if desired. get-attachment

Cook until beginning to caramelize, 5-8 minutes.  Spread bottom half of baguette with heated pizza sauce.  Place sausages over sauce, then add peppers & onions and top with cheese.  Place bottom half of sandwich under broiler and melt cheese. get-attachment (63)

Remove from oven, add fresh baby spinach or arugula, if desired, and place top half of baguette over bottom; gently push down,

Slice and serve HOT.
