My daughter loved this Green Kale Salad that we ordered at Tocolo Cantina so much!! This recipe is as close as we got. Hope you like it.
For the dressing:
1/3 cup lime juice
1/4 cup agave nectar
1/4 cup olive oil
salt/pepper
For the salad:
2 bunches kale, cleaned, destemmed and chopped
1½ cups cooked red quinoa – you can use white too
1 white onion chopped/diced
3/4 cup Queso Fresco cheese – grated
Blend the dressing together. Mix the salad together and pour dressing over and toss.
serves 4- 6
