Anytime of the year you will find us eating a hearty bowl of Lentil Soup satisfying and so delicious. The recipe is quick and easy thanks to Goya Lentil Beans.
8 cups water
2TBS olive oil
2 cups lentils rinsed
2 potatoes cut up
1 onion diced
2 cloves garlic – whole or chopped
salt/pepper to taste
2 stalks celery chopped
2 carrots chopped
2 lemons – juiced
Heat the oil in a large soup pot over medium heat Add the celery, carrot, potato and onion and cook, stirring occasionally, until the vegetables have softened Stir in the garlic. Salt and Pepper to taste and stir.
Add the water, lentils, bay leaf and stir. Cover and bring to a boil then reduce the heat to low stir and simmer covered, until the lentils and vegetables are soft, about 20 minutes more.
Taste and season as needed, then stir in the lemon juice. Serve and enjoy.
