Fresh n’ Lean is a ready-to-eat meal delivery service. Every meal is organic, fresh (never frozen), non-gmo, grass fed, and locally sourced. They cater to many different diets: paleo, vegan, dairy free, gluten free, low carb, and low fat. They ship nationwide (AK and HI included) via FedEx. They make 50,000 meals per/week and have expanded into a 55,000 sq/ft building with an FDA approved kitchen.  I am a big breakfast lover and so that was the first one I tried.

For the busy mornings when I get a call to stay with my grandchildren I can get a full and satisfying breakfast.  (instead of eating a hard-boiled egg in the car). Sausage, Eggs and Potatoes!! yes please.

Roasted Vegetables ~ Harvest Fest at the Office #PotLuck #recipe

Everyone brings in a favorite dish to share with all the co-workers at the office. Lots of good food and good cheer at this special time of the year.  For this years luncheon I decided to make roasted potatoes with carrots and onions. Happiness is eating with people you love. Hope you try the recipe.

Roasted Vegetables – serves 8
preheat oven 450

Ingredients

3 pounds  potatoes peeled and cut up
1 pound carrots peeled and cut up
2 medium onions peeled and cut up
1/4 cup good olive oil
Salt/Pepper to taste
2 tablespoons minced garlic (6 cloves)
2 tablespoons fennel seeds
1/2 cup cold water ~ optional

Place vegetables in a large bowl with the olive oil, salt, pepper, garlic and fennel seeds ~ toss until the vegetables are well coated. Transfer  to a baking pan and spread out into 1 layer. Add cold water Roast in the oven for 45 minutes to 1 hour or until potatoes brown.

It’s here again!  Thanksgiving!!  Gobble! Gobble!

Doesn’t It feels like we just finished eating last years turkey?  But time has no mercy!  It marches on…with or without us.  🙁

So, once again, let us begin the celebrations and celebrate Thanksgiving like it is the last Thanksgiving Day.    Remember, your family, and friends, are special gifts.  Give thanks for those simple moments that are given in life.  Don’t hesitate to say I love you, and smile when smiling is the hardest.  But most of all, don’t put  off the good things in life for tomorrow, for  tomorrow is not promised.  Let’s appreciate the today’s!
