Easter fills us with hope, joy and warmth. It is a time to get together with friends, family and loved ones and celebrate this joyful time. So blessed to share another Easter together. Our grandchildren  adore my niece Sandra and they kept her busy all afternoon.

After we ate and thought we could not eat another bite, out came the dessert. Marlene’s Orange Trifle is my very favorite – so refreshing and so good.

Safe Catch 100% Mercury Tested Canned Tuna

I have always been a once a week tuna eater. I like it right from the can on a salad or made into tuna salad. It is a easy lunch, dinner or snack any day of the week. So when I heard about Safe Catch 100% Mercury Tested Canned Tuna, I was excited to try it. Then I found out it has over 100% of the daily value of all 10 essential amino acids, B vitamins, selenium and potassium. But when you get right down to it, I had to taste it and it was delicious.

I kept it simple, added some tomatoes, cucumbers, parsley, green olives and my favorite radishes! Dressed it with home-made vinaigrette.  Eat Pure. Live Pure.

Give Peas A Chance Five Ways

Easy Peasy – 10 minutes to your table any way you serve them

Peas Five Ways
1 tbsp vegetable oil
2 cans (15oz.ea.) Del Monte  sweet peas drained
½ cup bagged shredded carrots
⅓ cup chopped fresh mint leaves

  1. Heat oil in a large non-stick skillet over medium heat; add peas and carrots. Cook 3 to 4 minutes; gently stirring occasionally, until heated through. Remove from heat.
  2. Stir in mint and season to taste with salt and black pepper, if desired.

VARIATIONS: Prepare recipe as directed, except:
-For PEAS WITH THYME & LEMON ZEST, cook peas with 2 tsp. fresh thyme leaves instead of carrots in Step 1. Stir in 1 tsp. grated lemon zest instead of mint in Step 2.
-For PEAS WITH MUSHROOMS, cook peas with 1 cup thinly sliced fresh mushrooms instead of carrots in Step 1. Stir in 1 tsp. chopped fresh rosemary instead of mint in Step 2.
-For PEAS WITH BASIL AND GARLIC CRUMBS, cook peas with 1/2 tsp. dried basil instead of carrots in Step 1. Omit mint and sprinkle with 1/4 cup crushed garlic croutons in Step 2.
-For ASIAN-STYLE SWEET PEAS, cook peas with 2 to 3 Tbsp. teriyaki sauce instead of carrots in Step 1. Omit mint and stir in 1/4 cup toasted slivered almonds in Step 2, if desired.
TIP: To toast almonds, place almonds in a heavy ungreased skillet. Cook over medium heat about 5 to 6 minutes, stirring frequently, until fragrant and golden brown.

Curious Critters Marine By David FitzSimmons

Curious Critters Marine by David FitzSimmons is an amazing book about marine animals.  Curious Critters Marine got my grandchildren curious enough to open the book instead of opening the i-pad or lap top.

 As soon as they saw the octopus on the front cover their interest was aroused.

With wide eyed interest they flipped through each page.IMG_0779

They got to see pictures of creatures they never had seen before

IMG_0773Christian’s favorite was the photo of the Loggerhead Sea Turtle.

Curious Critters Marine had creatures that made me say,”Look at that creature.”

Creatures like a California sea Cucumber, Lined Seahorse (the kids loved this little horse), Red LionFish, Hawaiian reef hermit Crab ( so cute peeking out of his shell), A Cushion Sea Star ( even in the picture you can actually see why it is called cushion).

Each picture with a simple story that children and adults can enjoy, especially at bed time.
