Happy Easter 2014 – Photo Heavy
My family and Mercis’ family were here yesterday for Easter. Our parents, children, grandchildren, sisters, nieces, nephews and cousins. We packed a full house and that is a good thing.
Here are the Easter eggs I colored on Saturday morning. I boiled 18 and lost only 2, I thought that was pretty good.

Whatever candy they did not eat, they decided to sell. The made a market on the spare bed. Can you believe they made $18.00?

Here is Miss Emma with Caleb. They were so cute playing together. It was all fun until they wanted to sleep. Then it was time to go home pronto.

After the appetizers, we start with my moms’ rabbit stew which is served with spaghetti. Our kids do not eat rabbit, but they love the sauce. Merci husband Billy and my son in law Bill do like the rabbit. There was ham, filet mignon and shrimp for all after we rested a bit.
I made two salads, a little something for everyone. There was also roasted potatoes.
This is a figolla, the traditional Maltese Easter cookie stuffed with almond paste. It comes in all types of shapes, this one is a fish.
This is the dessert table, what can I say? We take this very serious 🙂 My favorite is Marlenes’ tangerine trifle. She makes it on Easter and New Years Day. I’m looking forward to some more tonight.

It’s A Gooooal!
I am so excited about spring sports this year because my grandson has joined a soccer team. Â
Christian is the youngest member on his team. Â Most of the children are ages 5 and 6, he is yet to be 4 ( he will be 4 on the 21st of May. Â Did you know that Christian and Liz have the same birth dates). I love that! Â

Now here he is just practicing his walk. Â Well not exactly he was walking away from the soccer balls.
Of course the children had a great coach. This coach would call out simple instructions to the children and they seemed to follow the instruction fairly well. Â Except for one little tyke. Â My grandson!
Christian’s dad had to step in, a few times, to give his son some encouraging words or more like encouraging instructions. Â Now see the little guy in this photo. Â This guy showed so much enthusiasm for the sport that he got me cheering for him to make a GOAL!
Some how I don’t think that daddy’s talk really penetrated. Â Christian always seemed to be thinking of something else. Â What he was thinking? Â Heaven knows.
The first few minutes of the game Christian did appear to be getting involved. Â But then it became apparent that he was not going to get in between those dueling feet, for just a ball.
Towards the end of the game Christian was put in the goalie position. Â He did not really seem to like the goalie spot. I got the feeling that he may have thought he was being punished. Â I mean standing in front of a net while all the other kids are running and having fun just did not make him happy.
When the game was done it was time to get their after soccer game treats. Â The treats were especially welcomed by the future soccer players.
If there was a GOAL this was the time it happened.

Ground Chicken Stuffed Zucchini with Carrot and Potato
This is a great recipe for the warmer weather ahead. No oven. No sweat This dish is cooked on the stove top in a large frying pan with lid.
Ground Chicken Stuffed Zucchini with Potato and Carrot
2 Medium zucchini, 1 lb ground chicken, (pulp from the zucchini), 1/2 cup chopped onion, 1 egg – beaten, 1/4 cup seasoned bread crumbs, 3 TB olive oil, 1/2 cup grated cheese, 1/4 tp. salt, 1/4 tp pepper, 2 bay leaves, 4 small peeled potatoes – halved , 4 peeled cut up carrots
- Cut zucchini in half lengthwise Scoop out pulp, leaving 1/4-in. shells.
- In a large skillet, heat olive oil and cook ground chicken, pulp and onion over medium heat until meat is no longer pink; Remove from the heat stir in egg, bread crumbs, salt, pepper and 1/2 cup cheese.
- Spoon about 1/4 cup into each shell.
- Clean frying pan. Â
- Put stuffed zucchini and potato and carrots and bay leaves in frying pan – add 1/2 cup water or chicken stock – season to taste
- Cover with lid and cook over medium heat for 45 minutes until potato and carrots are tender.
- Yield: 4 servings.
You could use any ground meat you like. Enjoy 🙂
