Left Over French Fried Potato and Eggs

groovinmomspoteggs

The simple things in life are the best. Like potato and eggs on a bagel.  It’s easy, quick , inexpensive and a crowd pleaser.  Love ketchup on the side or sometimes I like to top  with sliced tomatoes.

Potatos & Eggs Sandwich

2 Tb olive oil
1 large russet potato – peeled and diced   Note:  (I used cut up  left over french fries from the diner) 🙂
1 medium onion – sliced thin
6 large eggs – beaten
Salt/Pepper to taste
4 Bagels or Rolls

Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the potato and cook  until browned  4 to 5 minutes. Add the onion and season with salt and pepper . Cook, tossing occasionally, until the potato is cooked through and the  onion are browned but not completely soft, 8 to 10 minutes. Salt & pepper. Reduce the heat to low and pour in the beaten eggs and cook, stirring constantly, until just set, 2 to 3 minutes. Remove from the heat.  Makes 4 sandwiches

Note: you can add a large green pepper – diced with the onion for a change

Dress United

050713 013My husband, Bill, is a T-Shirt lover.  I mean a real T-Shirt lover, he is.

Now it was his good fortune that DRESS UNITED created a special t-shirt just for him.  Well, they did not create the special t-shirt, I did with DRESS UNITED’S help.

http://www.dressunited.com site helped me create a t-shirt just for Mr. Bill.

When I  came across this web site I thought, how wonderful it would be to have a special t-shirt to wear when Mr. Bill is doing something special.

I pondered what could be special for Mr. Bill, then it hit me,  his very own BBQ T-Shirt.

Don’t you just love it!  BBQ Man!  What I really loved about this ‘t’ was  how I was able to flip the picture over.  Flip it! Get it? O.K. you don’t get it.

I  ordered the ‘T’  in blue, for blue is Bill’s favorite color.

Sandy and Jersey

A weekend getaway is always good therapy.   So when my girlfriend Joanne emailed me and asked if I would like to join her and her husband for a 2 night stay in Springfield, New Jersey, at the cost of $150.00 for the 2 nights  I replied, “Oh, yes we are coming!”

Joanne  saw this great deal through Travelzoo.com.

The deal was for a 2 night stay at Doolans Shore Club, which included  breakfast and  dinner on Saturday night.

I was so happy we were going away.  OK,  it  was not  Bermuda, but like I said,” A weekend getaway is always good therapy”, and not to have to make a bed, or cook, makes it just like going to Bermuda.

When we got to Springfield, NJ, and we got closer to the shore, we started to see the reality of what Sandy did.

The boardwalk on the beach was completely gone, and they are now beginning to recreate a new boardwalk.  Joanne, who lives in NJ, told me that they had recently replaced the boardwalk that Sandy tore away….

Do hope they get it ready for the summer season.

Here they are enjoying the sunny beach, Joanne, Joe and Bill.  I have to say we did have great weather, it could have been a little warmer, but rain would have been the pits…So sun and wind no problem.05012013 064

We did spend an afternoon with the horses.  My betting technique was not working.  I bet the horse based on the his/her name.   Take my advice this is a sure lose, lose.  Now Joe, on the other hand, bet a favorite and ended up being the only winner of the group.  Not a big winner, but a winner, so this was good

05012013 068   Lunch at an Irish Pub.  I love Irish Pub’s.   Sorry, I cannot remember the name, but it had good food and great beer.

It was here that we learned what Sandy brought to this little town.  The Pub we ate at was totally under water, only a few months ago, according to  the waitress.  We learned that the town’s people were canoeing, if they had a canoe, to get from one end of  town to the other.  This was AMAZING!  Also, hard to visualize, especially since the shore was about 6 blocks away.  However, I guess Sandy was able to get  the lake and the ocean to come up and meet smack dab in the middle of  town.

The town of Springfield, N.J., is recovering. 🙂

We saw the reconstruction of homes, roofs being replaced, and people getting back to their lives.  Joggers,  jogging, old and young alike. We saw Springfield, New Jersey, springing back.  Sandy tore throw, but the people got back up. They showed Sandy the, you can knock us down, but we can get back up attitude.

Yes, it did our hearts good to see this little town keep on moving.  It did our hearts good to know that no matter what happens we still have the power, and the choice, to get back on our feet and rebuild our lives.

God Bless, New Jersey!
