Tortellini Soup has become a weekly dish in my home. Now tortellini soup is not new to me but making it on a weekly basis, that is new. Tortellini soup became a culinary hit when on our visit to Germany, this fall, we had ventured into an Italian restaurant to eat. Yes, Italian in Germany! There we ordered the tortellini soup and enjoyed the light but hearty soup. I knew then that I needed to create this soup at home. I found lots of ways to create this flavored soup but zoned in on the one from Food Network
6 cups low sodium chicken stock
1 to 2 teaspoons minced garlic
One 9-ounce package cheese tortellini
1 package frozen chopped spinach, thawed and squeezed
Salt and pepper
1 can Italian style stewed tomatoes
Pour chicken stock into a large pot and bring to a simmer, for 3 minutes. Stir in tortellini and simmer 3 minutes. Stir in spinach, garlic, basil, salt, pepper and tomatoes. Bring to simmer and cook 2- 3 minutes more.
Done! It’s that easy!
Serve with *Parmesan cheese.
*I add Parmesan cheese in to soup as well. YUM! FOODNETWORK!
