Depending on what ingredients you use, the Soufflé can be served both as a savory main dish or sweetened as a dessert.

Jarlsberg Cheese has combined this French classic with a tangy lemon vinaigrette and a fresh tomato and watermelon salad which makes it perfect as an appetizer or main course, preferably enjoyed outdoors on one of those warm summer evenings.  

JARLSBERG® CHEESE SOUFFLÉ

1 cup milk

2 dried bay leaves

2 shallots, finely chopped

4 small ramekins

Baking paper

1 cup butter

4 tbsp. plain flour

salt

1 pinch cayenne pepper

1 tbsp. Dijon mustard

1 cup grated Jarlsberg® cheese

5 eggs with the whites and yolks separated

Jarlsberg® cheese for the topping

WATER MELON SALAD

watermelon

1 cup tomatoes

1 cup hazelnuts, roasted

1 lime

1 orange

2 cups olive oil

MAKES 4 PORTIONS

TO MAKE THE SOUFFLE 

Pre-heat the oven to 400 °F. In a pan, heat the milk, bay leaves and shallot until boiling. Remove the pan from the heat and let the contents rest for 20 minutes. Grease the inside of the ovenproof ramekins.

The soufflé mixture will rise quite high, so don’t overfill the ramekins. Melt the butter in a pan and stir in the flour.

Cook, stirring, for 1 min.

Strain the rested milk mixture, and gradually whisk it into the butter and flour mixture.

Cook over a low heat, stirring constantly, until the mixture thickens.

Remove from the heat. Stir in mustard, salt, cayenne pepper and grated Jarlsberg® cheese. Then stir the egg yolks into the mixture. Whisk the egg whites until stiff and gently fold them into the mixture, a little at a time. Divide the mixture between the greased ramekins.

Sprinkle a little extra Jarlsberg® cheese on top, if desired. Bake on the bottom shelf of the oven for 20-25 minutes until the soufflés are golden and well risen. They should be slightly soft in the middle. Slice the tomatoes and melon.

Make the vinaigrette by whisking the juice of the lime and the orange together with the oil and mixing well. Add salt and pepper to taste. Serve the soufflés immediately after they are taken out of the oven.

Serve with the tomato and watermelon salad garnished with roasted hazelnuts and with the vinaigrette.

Family, Time of the Season

Happy Mothers Day and Happy Anniversary – Two For One

Every year we go to Mercis’ home to celebrate Mothers’ Day together and every once in a while the day happens to be Merci and Bills’ Wedding Anniversary. This year was that year. Two reasons to celebrate is always better than one. When I asked Merci how many years, counting on her fingers she looked at me and said I think…. 46? Happy Anniversary you  crazy kids!

Our sisters and children were there. Damian and Erin went over for breakfast because Damian is a NYC Police officer and he had to work and then Erin went to her moms’ with the kids. We did miss them. My granddaughter was home with strep and her dad stayed with her. We missed them too. My daughter brought the boys over to wish my mom a Happy Mothers’ Day and she was so happy to see them. Kisses all around.

We were a cozy group and everyone got a chance to catch up with each other. It was raining so we spent the day inside and really enjoyed the great food Merci prepared for us all. She always goes way out. I had a little of everything and it all was delicious

Lentil soup, lamb, baked ziti, pork, green beans and roasted potatoes. Everyone gobbled it up but we were sure to leave room for dessert. Life is too short to skip cake.

Mother: A Person Who Does Work For Many. For Free. Thank you Merci for another beautiful Mothers’ Day. She reminded me that last year, we were not there because my family  were at the hospital with my mom who had suffered a stroke. I could not believe I forgot that, I am good at not remembering hard days gone by. So this day was extra special Three In One.

Love these guys to the moon and back and more than all the stars in the sky. Understand?

A Mother is like a flower, each one beautiful and unique. I pray we will get to do this all over again  next year.  Happy Mothers’ Day!

Looking For Splasher The Little Tasmanian Devil by Nancy Walker #Bookworm

Lets’ take a walk on the wild side. Looking for Splasher is a childrens’ book that teaches young readers about Tasmanias’ natural environment and the many native animals. This lovely book is educational and engaging for children and adults alike. Saint Andrew (Sant’ Andrija) The Patron Saint of Hal Luqa, Malta

The celebration of saints (feast days) are a big deal on the island of Malta.  Malta is predominantly a Catholic country.  So it is easy to understand why every village, on the island, have these religious festivities which are part of the island’s culture.   A festa or Village Feast occurs in the summer months.  If you have never been to a Maltese village feast you are missing out on a cultural experience of a life time.  I recently read that there are nearly 60 festas in Malta.  However, I know of a village feast that is close to my heart.  The village is Luqa, and the patron Saint of Luqa is St. Andrew (Sant’ Andrija)

Why is Saint Andrew the dedicated saint of the village?   His being a fisherman could be the reason why Saint Andrew was chosen to be the patron Saint of Luqa, since, at one time, many fishermen lived in the village of Luqa.    Saint Andrew is a very big deal to the village people.   So big is the deal that in Luqa many babies are baptized with the first or middle name of Andrew.  My dad is one of them.

Saint Andrew’s feast always starts at the parish church in Luqa.  The church was founded on the 15th of May, 1634.   The parish church was always dedicated to Saint Andrew the Apostle.  The church is located in the center of the village square in Luqa and is one of the oldest parishes in Malta.  Saint Andrew’s feast is celebrated every year on the first Sunday of July.  The whole town comes out for the celebration.   Along with a display of  Fireworks  that keeps both Maltese and foreigners in pyrotechnic awe.

Hal Luqa is all about Saint Andrew.  All about the man who was one of the first to follow Christ.  Who was the brother of Peter (Simon).  Who was called to be a “fisher of men”.  In Luqa, Saint Andrew will never be forgotten.  I mean who can forget when you are honored with a week long celebration that no one one could replica.

July, 2018 is almost here.  The church doors will  burst open and the church bells will toll.  As the statue of Saint Andrew is processioned out.

One more item.  I was baptized in the church of Luqa and my middle name is Andrea (female version of Andrew).
