New pencil
Construction Paper
Red Ink Pad
Heart shape cut out of cardboard

Dip your pencil eraser lightly on ink pad

Press firmly with your pencil for each dot (you can color outside only or inside only) Have fun
Create a nice ombre effect by starting on the edge and working out or around
Write your message of love

Pesto Double-Stuffed Potatoes

February is National Heart Month, and a reminder to everyone to take care of their hearts.

Pesto Double-Stuffed Potatoes

Ingredients:

  • 4 large Idaho® potatoes, baked
  • ½ cup part-skim ricotta cheese
  • 1/4 cup prepared pesto
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • Non-stick cooking spray

Directions

  1. Preheat oven to 450° F.
  2. Cut ½ inch from long side of each potato into bowl; scoop inside of potato, leaving a ¼ inch-thick shell. With fork or potato masher, mash cooked potato in bowl. Stir in ricotta, pesto, salt and pepper until well blended. Spoon potato mixture into potato shells, divided evenly, heaping on top if necessary.
  3. Lightly spray cookie sheet with nonstick cooking spray; place stuffed potatoes on cookie sheet. Bake until golden brown and heated through, about 10-15 minutes.

My daughter in law told me about it, she claimed that it was helping her lose those unwanted few pounds.  You know those pounds that we just cannot seem to shake off.

Myfitnesspal gives  your daily breakdown of carbs, protein and fat.  I will have just finished my first full week with myfitnesspal this Saturday.  I have to say, even without the app telling me, I know that I have done right by my body with the help of myfitnesspal.
