Enchilada Pie

Ok, cinco de mayo is over but we can still enjoy a nice encilada pie…this recipe is so easy….Go ahead give it a Pinata Shot…

Ingredients:

  • 1 can enchilada sauce
  • 1 can cream of mushroom soup
  • 1 1/2 cups chopped chicken
  • 1/2 cup chopped onion
  • 1 bunch chopped cilantro
  • 1 cup white cheese
  • 1 cup flour
  • 4 tablespoons softened butter
  • 1/4 teaspoon salt
  • 2 scallions, sliced

Directions:

Prep Time: 30 minutes
Cook Time: 30 minutes
Makes: 6-8 servings

1. Combine enchilada sauce and soup to make the sauce.

2. Combine chicken, onion, cilantro and cheese for filling.

3. Mix dough ingredients and roll into a ball. Wrap in plastic wrap and let rest 1 hour in the refrigerator. Unwrap and roll dough into a disc, then press into a pie plate.

3. Layer the ingredients into the prepared pie shell and top with chopped green onions.

4. Bake in preheated oven at 375 degrees for about 30 minutes. Let stand 10 minutes, serve.

The Time to Toss It Out Is Now

If you are like me, you have forgotten to remember to throw out expired items all over the house. Every year  I promise myself that I will do it right this time, but life gets in the way and I get side-tracked.  Here are some items I just got rid of.

In the Bathroom: Old saline solution, sunscreen and medications.  Even unopened saline solution and drugs can quickly become less potent past their experation dates.  High temperatures degrade sunscreeen, so replace it once a year.

 

In The Kitchen: That  old water-pitcher filter because they will remove contaminants from 40 gallons of water – about three (3) months worth of normal use.  After that, the filter is useless.  No warning light or timer on your filter?  Slow flow  indicates it’s maxed out.

In the bedroom:  All worn out sneakers, running or walking shoes that easily bend in half at the midsole, they may increase your risk of injury.  Average sneaker life span is 300 to 500 miles or about six (6) months.

You will be surprized at how good you feel after the cleaning is done!!

Grand Kids Are Fun!

It’s a Friday evening and all through the house are sounds of laughter…see when the grand-kids come over we never know what will happen…on this day Sophie decided that she needed to dress up in some very interesting items.

Here is Ms. Sophie, wearing a pair of very interesting sunglasses…look Grandma I have sunglasses just like yours…well not exactly, Sophie, those sunglasses have slots and I really don’t thing they are going to protect your eyes from the sun…

As we play Mr. Christian watches with thumb in mouth…this is how he calms himself down…but once the thumb comes out watch out..he is looking for trouble.

Daddy and son…careful Damian, Christian is about to pop out his thumb and then your relaxing moment is going to be over…I guess that is why he is watching him very carefully…

How do these sunglasses work Grandma?  Not sunglasses, dear, they are La Cross googles…they also will not protect your eyes from the sun…but I do love the glasses on your head…is that to protect your hair from the sun? 

Ok, she finally got me to take part in her little identity venture…Hey, Sophie we look like we are off to Australia…so now we ready to fight crocodiles, snakes, and whatever else comes our way…Power to Grandma and Granddaughter!

Snatch That Cat!

Back in 1997, author Larry Buttram, from Manassas Park, Virginia, was playing a game with his three-year-old niece, Lauren, when she said “Uncle Larry, I think someone should invent a game called, ‘Snatch That Cat’ all about a little girl trying to steal a cat. Fifteen years later, Buttram turned the idea for ‘Snatch That Cat’ into a child’s picture book.

STC is about a spoiled little rich girl, Susie bipp, who falls in love with her neighbor’s beautiful black cat, Simon…A spoiled little girl, this Susie is, indeed.

 So the story begins as  Susie plots to snatch the cat.

STC is a warm story with a lesson in the end… If you want   to learn what happened to Susie and the cat you will have to snatch the book.
