Salmon Patties/Burgers

This is one of my moms’ recipe that she would whip up in the summer time. She would serve them cold with small salads of all kinds, cold vegetables, olives and Italian bread.

1 15oz canned salmon drained
2 eggs beaten
1/2 cup diced peppers
1 large clove garlic minced
1 tsp each mustard, soy sauce, tabasco
1/2 bread crumbs

Mix all ingredients in a bowl. Mix well. Make the patties size you like. Somedays my mom make them small which is a great size for appetizers. Enough Olive Oil to cover the bottom of a big frying pan. Heat. Oil must be pretty hot before you add patties, so they won’t stick. Carefully place patties in heated oil medium heat and let brown – do not touch. Let the edges brown before you flip over.

Flip over carefully pat down patty and let other side brown. Remove and let them cool. Serve warm or cold with your favorite sides and/or bread.
